Healthy Chocolate Chip Cookies

These gluten free, dairy free cookies are my families favorite, hope you enjoy!


Ingredients:

  • 2 cups blanched Almond Flour

  • 1/4 cup arrowroot powder

  • 1/2 cup Enjoy Life chocolate chips

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 2 tbsp raw organic honey

  • 2 tbsp melted coconut oil

  • 1/4 cup unsweetened almond milk

  • 1 tsp cinnamon (optional - nice to change it up on occasion)

Instructions:

  1. Preheat oven to 350* F, and lay a cookie sheet with parchment paper.

  2. In a large bowl combine all the dry ingredients and mix well.

  3. In a microwave-safe bowl melt the coconut oil (start with 20 seconds)

  4. Combine the coconut oil, extract, and honey, I find it best to use a whisk for this.

  5. Add the wet to the dry and give it a rough stir, doesn’t need to be mixed in all the way yet.

  6. Add the almond milk and combine well until you have a cookie dough.

  7. Use the tablespoon you used for the coconut oil to scoop out the dough and using your other hand put it onto the tray and press down lightly to flaten a bit.

  8. Bake for 12 mins, take out and let cool 10 mins then transfer to. cooling rack before packaging. These can be stored in an air-tight container. Consume within 3 -4 days.
