Black Bean Peppermint Brownies Recipe

I don't mess around when it comes to chocolate. These brownies may have you thinking 'black beans in brownies? yuk!'  but trust me you need to give them a try! I have been working on this recipe for a while and what absolutely made it was the Young Living Peppermint Vitality essential oil.  Just wait until you try these, they are amazing!

Serves: 8

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients:

2 tablespoon cocoa powder

  • 1 (15 ounce) canned black beans

  • 1/2 cup rolled oats

  • 1/4 teaspoon sea salt

  • 1/2 cup pure maple syrup

  • 1/4 cup coconut oil

  • 2 teaspoon pure vanilla extract

  • 1/2 teaspoon baking powder

  • 1/2 cup chocolate chips

  • For the Drizzle topping:

  • 1/2 cup chocolate chips

  • 1 tablespoon coconut oil

  • 2 drops of Young Living Peppermint Vitality

Instructions:

To prepare: preheat oven to 350. Grease a 9×9 pan. Drain and rinse beans well. Gently melt coconut oil in small sauce pan or double boiler method.

1. Combine all ingredients (except chocolate chips) in a food processor and process until completely blended.

2. Mix in the the first 1/2 cup of chocolate chips.

3. Pour batter into greased pan and bake for 17-20 minutes.

4. Make the drizzle topping; gently melt the last 1/2 cup of chocolate chips and the tbsp coconut oil in a small sauce pan (I just use the same one I melted the coconut oil in from the beginning)

5. Take the topping off the stove and stir in 2 drops of the Peppermint Vitality and drizzle or smooth over the top of the brownies like a frosting.

6. Let cool for at least 15 minutes on counter then put in fridge until the topping has cooled to make slicing easier.
